Course info
This is an established specialist cookery course for equally the keen amateur and professional alike. It provides a strong practical content with authentic standards to help develop these specialist skills. On this course students will learn to prepare and cook a wide range of authentic dishes from the Caribbean, including ackee and salt fish, jerk, rundown, rice and peas, Sunday chicken and many more. Chinese dishes include dim sum, soups, spring rolls and wok cookery - stir fried dishes, rice dishes.

Applicants must demonstrate a basic level of numeracy, literacy and enthusiasm plus a successful college interview.
Equipment and Materials
Applicants will need a white coat, tea towel, oven cloth and a couple of basic knives
